+

You'll need

  • 15 lemons
  • 3 cups sugar
  • 3 cups water
  • 2 tbsp cumin (jeera) seeds
  • 3 tbsp finely ground red chillies
  • 1½ tbsp salt
  • Optional: 2 tbsp methi masala or achaar masala

  4. Add the cumin seeds, red chillies, salt and optional masala to the cut lemons.
  5. Allow the syrup to cool slightly, then combine it with the seasoned lemons.
  6. Transfer into clean, sterilised containers. Store safely and refrigerate after opening.

  • White vinegar, enough to cover peels
  • A clean glass jar with lid
  • Spray bottle
  • Water to dilute (1:1)

Steps

  1. Pack the lemon peels into the jar.
  2. Pour vinegar over the peels until fully submerged.

Steps

  1. Cut each lemon into quarters, stopping just short of the base so it stays attached.
  2. Pack the inside of each lemon generously with salt.
  3. Press lemons firmly into the jar, layering with more salt as you go.
  4. Add optional spices, then top up with fresh lemon juice until lemons are fully covered.
